Baking Muffins Right - Quickly Stirred
Baking muffins is a piece of cake. Start by thoroughly mixing all the"dry" ingredients such as flour, baking powder, chocolate, nuts, and spices in one bowl. Combine the"wet" ingredients like eggs, oil, dairy products and fruit, juice, or alcohol in a second bowl. Then add the "dry" ingredients to the "wet" ingredients and stir briskly for just a moment. If you stir the batter too long, the muffins will be dry. It's also important to place the finished batter into the preheated oven as quickly as possible. If it sits too long, the muffins will be heavy and dry.
