Banana Pancakes RecipeThese pancakes make a tasty and nutritious brunch when served with summer berries and a drizzle of maple syrup. Fruit sauce and yogurt would also make delicious toppings.
(The skins will darken, but the fruit inside will remain ripe and fresh.) For longer storage, mash the fruit with a little lemon juice, pack into freezer containers (leaving 1⁄2-inch headspace), and freeze. Thaw in the refrigerator before using.
