Butterfly Birthday Cake Recipe

We asked my niece what kind of cake she likes to have for birthday. She wanted butterfly cake with lots of candies, pink pearls, sugar strands and she especially said not to forget the candles. This was a real challenge making this butterfly cake. As you all know kids are the most honest judges. We where relieved when we saw kids smiling. In that moment was the real satisfaction for all the effort we put in making this butterfly cake. Emely's STAR recipe.

Cake Layer 1

  • 6 egg yolks
  • 200 g sugar
  • 6 tablespoons of warm water
  • 200 g flour
  • 1 baking powder
  • 3 tablespoons cocoa Nesquick
  • 6 egg whites
  • 2 vanilla sugar

Cake Layer 2

  • 6 egg yolks
  • 200 g sugar
  • 6 tablespoons of warm water
  • 200 g flour
  • 1 baking powder
  • 6 egg whites
  • 2 vanilla sugar


1x Chocolate Ganache Cream (one day ahead)


1x Marshmallow Fondant (one day ahead)

  1. Preheat oven to 170-175°C. Line a shallow baking tin (30 x 40cm) with baking parchment.

  2. Separate the white from the yolk. First beat 6 egg whites and add 2 vanilla sugar.

  3. In the mixture of egg yolks (egg yolks + sugar + warm water), add 3 tablespoons cocoa, mix with electric mixer until fluffy.

  4. In the brown mixture with a wooden spoon gradually add beaten egg whites and carefully stir the batter, add sifted flour with baking powder and fold in using a large metal spoon.

  5. Pour the mixture to the baking tin and bake 170-175°C, 3o to 45 minutes. Bake the Cake Layer 2 the same as the Cake Layer 1 just don't add a cocoa.

  6. When the biscuits are baked, transform the biscuits on to kitchen cloth and let them cool. Cut out the butterfly outline from the piece of paper and place on the cake. Cut around with your knife. Set all the leftover cake aside ( see note what to do with leftowers).

  7. One day ahead: Making the Chocolate Ganache Cream

  8. Fill the butterfly cake with Ganache inside two layers and sprinkle with peaches cut into small pieces. Coat the cake with remaining cream. Let it stand for one hour in fridge before you can design your cake.


You can decorate your birthday butterfly cake with really anything you like, for example with Smarties, whipped cream colored with food colors, melted white chocolate, sugar pink pearls, sugar strands with mixed colors..

This biscuit is nice to work with and cutting out any shapes.

So what to do with cake leftovers? Use cake leftovers for making delicious cake pops.
