Ginger Marzipan Waffles Recipe

Ingredients

  • 7 tbs (100 g) butter, softened
  • 14 cup (50 g) powdered sugar
  • 12 tsp vanilla extract
  • 3.5 oz (100 g) chilled almond paste
  • 4 eggs
  • 1 tbs finely chopped fresh ginger
  • 13 cup (75 g) white flour
  • 7 tbs (100 g) whole wheat flour
  • 2 pinches baking powder
  • 12 cup (125 ml) milk
  • grease for waffle iron
  • powdered sugar

Directions

  1. Beat together butter, sugar, and vanilla extract until fluffy. Finely grate almond paste and using a hand blender, whisk with eggs to form a smooth, creamy mixture. Stir into butter mixture. Fold in ginger.
  2. Combine white flour, whole wheat flour, and baking powder and stir into batter, alternating with milk. Cover batter and let stand for 10 minutes.
  3. Preheat waffle iron and grease cooking surfaces lightly. Spoon 3 level tablespoons batter onto the center of the waffle iron.
  4. Bake each waffle for 2-3 minutes until golden brown. Transfer to a wire rack, dust with sifted powdered sugar while still warm, and serve. Waffles with whole grain flour are especially dense. A little whole wheat flour can be added to any waffle batter. If it is, be sure to add a little more liquid as well.
