How to make American Waffles

Ingredients

  • 1 cup (14 liter) milk
  • 34 cup (175 g) buckwheat flour
  • 12 cube (21 g) yeast
  • 7 tsp (35 g) sugar
  • 14 cup (50 g) butter
  • 2 eggs
  • 34 cup (175 g) flour
  • kosher salt
  • grease for waffle iron

Directions

  1. Heat milk and 1 cup (14 liter) water and pour onto buckwheat flour. Let cool. Stir together yeast 12 teaspoon sugar, and 4 tablespoons lukewarm water until the yeast dissolves.
  2. Cover and lei stand for 15 minutes. Melt butter and let cool. Beat together buckwheat mixture, yeast mixture, butter, sugar 1 pinch salt, eggs, and flour. Cover and let stand for 30 minutes. Preheat waffle iron and grease the four cooking surfaces lightly.
  3. Spoon 2 tablespoons batter onto the center of the waffle iron. Bake each waffle for about 2 minutes until golden brown. Serve with crispy bacon and maple syrup.
