Do you feel a sudden craving for something sweet or have unexpected guests arriving on your doorstep? This is the perfect time for muffins, because the basic ingredients are almost always already on hand. And when vou use this simple basic recipe, you can always invent new varieties just by adding different ingredients. Just be sure to get the ratios right .

Tip :
This basic recipe is also the basis for savory muffins. For these muffins, omit the sugar and add 2 tsp salt instead. If desired, add herbs. 7 oz diced ham. 7 oz cheese, steamed vegetables, etc.

Easy Muffin Recipe (makes 12 muffins)

1 cup flour
2 tsp baking powder
2 eggs

1 cup yogurt
½ cup sugar
⅓ cup oil

Optional: 1cup fruit (fresh,
unthawed frozen, or drained canned fruit)

Step 1
Preheat oven to 350°F. Line muffin tin with paper baking cups or grease the tin.

Step 2
Combine the flour and baking powder. If you use fruit, prepare, drain, or chop it.

Step 3
Thoroughly whisk together eggs, yogurt, sugar and oil. fold in fruit, and then add flour mixture. Stir the mixture briskly but only briefly.

Step 4
Spoon batter into the baking cups and bake in the oven for 20-25 minutes. Let stand in the tin for 5-10 minutes and then cool on a cake rack.
