Lamb Chops with Yogurt Mint Sauce

Lamb Chops with Yogurt Mint Sauce

Ingredients

  • 4 (6 ounce) lamb chops
  • 2 tablespoons olive oil
  • 12 teaspoon salt, divided use
  • 14 teaspoon ground black pepper divided use
  • 1 (8 ounce) container plain yogurt
  • 1 lemon, juiced1 tablespoon chopped fresh mint
  • 14 teaspoon paprika

Directions

  1. Preheat broiler.
  2. Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium rare.
  3. Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well. Serve lamb chops drizzled with yogurt sauce.
